Petits Pots de Creme

Serves 10


  • 300ml Australian milk
  • 900ml pure Australian cream
  • 1 vanilla bean
  • 100g dark couverture chocolate
  • 3 teaspoons instant coffee powder
  • 2, 55g eggs, lightly beaten
  • 8 egg yolks
  • 200g caster sugar

  1. Combine milk and cream and divide between three saucepans.
  2. Add vanilla bean and seeds to the first, chocolate to the second and coffee to the third.
  3. Simmer each for 10 minutes.
  4. Combine eggs, egg yolks and sugar and divide evenly between each saucepan.
  5. Strain each mixture into individual serving pots and bake at 180 degrees in a bain marie for 20-30 minutes or until just set. Allow to cool.
