Pesto Butter Topped Grilled Oysters

Serves 4


  • 100g Australian butter
  • 3 tablespoons freshly grated Australian parmesan cheese
  • 3 tablespoons finely shredded basil leaves
  • salt and freshly ground black pepper, to taste
  • 16 fresh oysters
  • rock salt, for serving
  • lemon wedges, for serving
  • extra basil leaves, for serving

  1. 1. Combine butter, parmesan cheese, basil, and seasonings.
  2. 2. Spread approximately one teaspoon of pesto flavoured butter over each oyster. Place under a hot grill and cook for one minute or until golden brown and oyster has just heated through. Don't overcook.
  3. 3. Serve oysters in their shells on a layer of rock salt. Garnish with lemon wedges and basil leaves.
