Pesto Bocconcini Bruschetta

Ingredients

  • 200g Australian bocconcini, quartered
  • 2 tablespoons good quality pesto
  • 4 slices of baguette, toasted
  • 1 tomato, sliced
  • extra virgin olive oil, for drizzling, optional

Method

  1. 1. Toss bocconcini and pesto in a bowl till well coated.
  2. 2. Top baguette slices with tomato, and mound pesto coated bocconcini on top.  Drizzle with olive oil, if desired and serve.
