  • 1 cup Australian thickened cream
  • 1 cup caster sugar
  • 1 tablespoon gelatine
  • 2 tablespoons creme de menthe liqueur
  • icing sugar, sifted
  • extra icing sugar, for decorating

  1. Heat cream, sugar and gelatine until sugar dissolves, stir and bring to the boil, stirring continuously. Simmer for 10 minutes. Add creme de menthe and stir well. Sprinkle the base of a 25cm x 6cm loaf pan with sifted icing sugar. Pour in mixture and allow to set in refrigerator. Cut into 2cm squares and roll in extra icing sugar.
