Pecan and Blue Fillet (Microwave)

Serves 6-8


  • 2 cups red wine
  • 1/4 cup whole green peppercorns
  • 1.3 kg eye fillet
  • 250g Australian blue vein cheese, crumbled
  • 1/4 cup pecan nuts, roughly chopped

  1. Combine wine and peppercorns and marinate meat for 2 hours or overnight. Remove meat and cut to open out lengthwise. Sprinkle cheese and pecans along the centre and then close up meat. Wrap securely with cling wrap and cook in a microwave on Med-High for 10 minutes. Allow meat to stand for 5 minutes then unwrap. Cut into thick slices and serve immediately.
