Peach Whip Parfait

Serves 6


  • 1 x 800g can peach halves, juice reserved
  • 1 x 85g packet lemon jelly crystals
  • 1 cup Australian evaporated milk, chilled
  • juice of 2 lemons
  • 2 tablespoons toasted flaked almonds

  1. Bring one cup of reserved juice to the boil, add jelly crystals and stir until dissolved. Allow to cool slightly. Beat evaporated milk until soft peaks form, then beat in lemon juice and jelly. Place 1 peach half each in the base of 6 parfait glasses. Pour mixture over and refrigerate until set. Garnish top with peach half and flaked almonds.
