Peach "N" Rice Meringue

Serves 4


  • 1/2 cup rice, washed
  • 1/2 cup water
  • 2 cups Australian milk
  • 1/2 cup caster sugar
  • 8 canned peach halves
  • 2 egg whites

  1. Cook rice in water until absorbed. Add milk. Cook gently stirring occasionally until rice is tender and thick. Add 1/4 cup sugar. Place peach halves in shallow ovenproof dish. Fill centres with rice. Whip egg whites until stiff adding remaining sugar. Pipe or spoon meringue on top to cover each rice filled peach. Bake at 180C for 15 minutes until lightly browned.
