Peach and Strawberry Passionfruit Cream

  • 250g Australian continental-style cottage cheese
  • 1 x 125g can passionfruit pulp
  • 2 tablespoons caster sugar
  • 1 x 825g can peach slices, drained and juice reserved
  • 6 strawberries, sliced

  1. Beat cottage cheese, passionfruit pulp and caster sugar together until smooth and creamy. Refrigerate until firm. Arrange peach slices in the base of 6 individual serving glasses. Spoon or pipe cheese mixture on top. Garnish with sliced strawberries.
