Parmesan Schnitzels

Serves 6


  • 750g veal steak
  • 1/2 cup flour
  • 1/2 teaspoon mustard powder
  • black pepper
  • 3 eggs, beaten
  • 1/2 cup Australian Parmesan cheese
  • 1 cup dry breadcrumbs
  • 125g ghee

  1. Flatten and trim veal steaks. Season flour with mustard and pepper. Coat each steak with seasoned flour, then egg. Sprinkle with cheese then coat with breadcrumbs. Place in refrigerator for 30 minutes. Heat ghee in a frying pan. When foaming, add one or two schnitzels at a time and cook 2-3 minutes on each side. Drain well on absorbent paper. Serve garnished with slices of lemon and hard boiled eggs.
