Panettone with Ricotta and Orange Syrup Dates

A delicious breakfast or brunch treat.

INGREDIENTS

  • 12 fresh dates, halved and pitted
  • 1/2 cup freshly squeezed orange juice
  • rind of 1 orange, cut into thin strips
  • 2 teaspoons brown sugar
  • 4 thick slices panettone or brioche
  • 250g fresh ricotta cheese

METHOD

  1. Combine dates, orange juice, rind and sugar in a bowl, cover and stand overnight.
  2. Toast panettone until golden and spread thickly with ricotta, top with dates and drizzle with syrup, serve immediately.

HANDY TIPS

Prunes can be substituted for fresh dates.
