Panettone with Ricotta and Orange Syrup Dates

  • 12 fresh dates, halved and pitted
  • 1/2 cup freshly squeezed orange juice
  • rind of 1 orange, cut into thin strips
  • 2 teaspoons brown sugar
  • 4 thick slices panettone or brioche
  • 250g fresh Australian ricotta cheese

  1. 1. Combine dates, orange juice, rind and sugar in a bowl, cover and stand overnight.
  2. 2. Toast panettone until golden and spread thickly with ricotta, top with dates and drizzle with syrup, serve immediately.

Tips / Handy Hints

Prunes can be substituted for fresh dates.
