Pan-fried Haloumi with Tomato Salsa

  • 3 tomatoes, quartered, de-seeded and chopped
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 2 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 350g Australian haloumi cheese
  • 2 tablespoons plain flour
  • 1/4 cup olives, for garnish
  • crusty bread, for serving

  1. 1. Combine tomatoes, fresh herbs, lemon juice and oil and allow to stand for at least 10 minutes. Cut cheese into 4 thick slices and lightly coat in flour.
  2. 2. Brush frypan with a little extra olive oil and cook the cheese over a low heat until golden on both sides. Serve salsa over cheese. Garnish with olives and serve with crusty bread.
  3. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
