Oriental Salad with Ginger Yogurt Dressing

Serves 4-6

Ingredients

  • 250g button mushrooms, sliced
  • 125g bean shoots
  • 1 green capsicim, sliced
  • 6 spring onions, sliced
  • 1 x 230g can sliced water chestnuts, drained
  • 1 x 425g can baby corn, drained
  • 2 tablespoons soy sauce
  • GINGER YOGURT DRESSING
  • 1 cup Australian natural yogurt
  • 2 teaspoons finely grated root ginger
  • ground black pepper, to taste

Method

  1. Combine all salad ingredients together in a serving bowl. Add combined ginger yogurt dressing and toss to coat vegetables. Serve with fish, chicken or barbequed meats.
