Oriental Salad

  • 200g Australian low fat creamed cottage cheese and gherkin
  • 2 oranges, segmented
  • 3 spring onions, chopped
  • 125g button mushrooms, thinly sliced
  • 50g bean shoots
  • lettuce leaves
  • 1 tablespoon chopped parsley

  1. Place cottage cheese in a bowl. Take half the orange segments, cut them in two and add to the cheese. Stir in onions, mushrooms and bean shoots until combined with cheese. Place lettuce leaves in a salad bowl. Spoon in the salad then arrange remaining orange segments around the edge. Serve with parsley sprinkled on top.
