Orange Ring Cake

Serves 8


  • 125g Australian butter
  • 1/2 cup caster sugar
  • 2 eggs
  • 1 1/2 cups cornflour
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon orange rind
  • 2 tablespoons orange juice
  • 1 tablespoon Australian milk
  • 1 cup orange marmalade
  • 1 tablespoon water

  1. Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Sift cornflour and baking powder together. Add orange rind. Combine orange juice and milk. Fold dry ingredients into creamed mixture alternately with orange milk. Spoon into buttered and paper lined 20cm ring cake pan. Bake at 190C for 40-45 minutes. Turn onto a serving plate. Remove paper.
  2. SAUCE - Combine marmalade and water in a small saucepan. Heat over gentle heat until hot and syrupy. Spoon over the cake whilst still warm.
