Orange Pannacotta with Fresh Fruit Salsa

  • 1 1/2 teaspoon pure agar agar powder
  • 1/2 cup Australian Reduced Fat Milk
  • 2 cups Australian Pure Cream
  • 1/3 cup castor sugar
  • 1 vanilla bean, split lengthwise (or essence)
  • grated rind of 1 orange
  • 2 tablespoons Grand Marnier liquier
  • 2 cups finely diced fresh fruit
  • 1/2 cup passionfruit pulp

  1. 1. Combine agar agar, milk, 1 cup cream, sugar, vanilla bean and orange rind in a saucepan, bring to the boil and remove from heat. Strain mixture into a bowl, stir in Grand Marnier and allow to cool, occasionally rewhisking to prevent uneven cooling.
  2. 2. Whip remaining cream until soft peaks form and gently fold into cooled agar agar mixture. Pour into 6 x 1/2 cup dariole moulds or souffle dishes, cover and refrigerate overnight. Gently remove Pannacotta from moulds and serve with Fresh Fruit Salsa.
  4. Combine fruit together and use as required.
  5. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
