Orange Buttermilk Custard

Serves 5-6


  • 2 eggs
  • 1/3 cup caster sugar
  • 1 1/2 cups Australian buttermilk
  • grated rind of 1 orange
  • 1 teaspoon vanilla essence
  • 3 tablespoons plain flour
  • 1 orange, segmented for garnish

  1. Beat together eggs and sugar until light and fluffy. Add 1 cup buttermilk, orange rind and vanilla essence and beat until combined. Mix flour with remaining buttermilk until smooth and add to mixture. Pour into a 2 1/2 cup ovenproof dish and place in a dish with 3cm hot water. Bake at 175C for 45-60 minutes. Remove from water bath and allow to cool. Serve with orange segments.
