Orange Apricot Cream

Serves 4


  • 1 x 425g can apricots in natural juice
  • 1 teaspoon grated orange rind
  • 1/2 cup Australian reduced cream, whipped
  • 200g Australian apricot low fat yogurt
  • 2 teaspoons agar agar(or gelatine), dissolved in 1 tablespoon hot water
  • 1/2 cup fresh orange juice (sweetened if desired)
  • 2 teaspoons agar agar or gelatine, extra, dissolved in 1 tablespoon hot water

  1. Drain the apricots and puree, reserving a few pieces to garnish. Combine puree with orange rind, cream, yogurt and agar agar (or gelatine). Spoon the mixture into 4 parfait glasses and refrigerate until set. Combine the orange juice and extra agar agar (or gelatine) and pour over the apricot cream. Refrigerate until set. Serve with reserved fruit.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
