Orange Apple Flapjacks

Serves 4


  • 1 cup self raising flour
  • 1/2 cup Australian skim milk powder
  • 1 egg
  • 1 1/2 cups water
  • 125g Australian continental-style cottage cheese
  • grated rind of 1 orange
  • 1/4 cup orange juice
  • 2 medium cooking apples, peeled and grated
  • icing sugar, for dusting

  1. Sift flour and milk powder into a bowl and make a well in the centre. Combine the egg and water and gradually whisk into the flour to form a smooth batter. Allow to stand for 30 minutes. Lightly butter a non stick or crepe pan with butter and heat. Pour 1/4 cup mixture into the pan, swirl and cook over a low heat for 3 minutes or until golden underneath. Turn over and cook a further 2 minutes or until golden. Repeat with remaining mixture to make 8 flapjacks. Beat cheese, rind and juice together until smooth and fold through apple. Divide mixture between flapjacks and roll up. Place side by side into an ovenproof dish and cover. Bake at 180C for 30 minutes and serve dusted with icing sugar.
