Onion Quiche Supreme

Serves 6


  • 375g frozen shortcrust pastry, thawed
  • 30g Australian butter
  • 3 large onions, peeled and thinly sliced
  • 3 eggs
  • 300ml Australian sour cream
  • 125g Australian blue vein cheese, crumbled
  • salt and pepper, to taste

  1. Line a 23cm quiche tin with shortcrust pastry. Melt butter in a small saucepan and saute onions until transparent. Spoon over pastry. Beat eggs and cream together. Add blue vein cheese, salt and pepper and pour into tin. Bake at 200C for 15 minutes. Reduce oven to 180C and bake for a further 30 minutes. Allow to stand for 5 minutes before removing. Serve sliced.
