One Pot Sizzler

Serves 4-6


  • 1 cup rice shaped pasta or brown rice, cooked
  • 1 x 425g can butter beans, drained
  • 1 onion, chopped
  • 1 x 340g can asparagus, drained, chopped
  • 1 medium carrot, chopped
  • 2 zucchini, diced
  • 1 x 425g can tomatoes
  • 150g Australian mozzarella cheese, diced
  • tabasco sauce to taste
  • 4 slices wholegrain bread
  • 2 tablespoons Australian butter
  • 1 tablespoon grated Australian Parmesan cheese

  1. Place the first nine ingredients into a casserole dish and mix well. Spread the bread with butter and cut each into four triangles. Place these decoratively over the casserole and sprinkle with parmesan. Bake at 190C for 30 minutes.
  2. **This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
