Noodle Knock-Out

Ingredients

  • 150g shell or spiral noodles
  • 10g Australian butter
  • 1 large onion, sliced
  • 200g mushrooms, sliced
  • 200g zucchini, sliced
  • 1 teaspoon oregano
  • freshly ground black pepper to taste
  • 1 teaspoon Worcestershire sauce (optional)
  • 1 x 425g can tomatoes
  • 4 slices bread, cut into 1.5cm cubes
  • 100g Australian mozzarella cheese, grated
  • sweet paprika

Method

  1. Cook noodles in boiling water until tender. Melt the butter in a large saucepan, cook the onion until transparent. Add mushrooms, zucchini, oregano, pepper and Worcestershire sauce and cook for 5 minutes. Add the tomatoes, roughly breaking up whole tomatoes. Add the drained noodles. Pour into a casserole dish, cover with bread cubes, sprinkle with cheese and lightly dust with sweet paprika. Bake at 200oC for 20 minutes or until bread is golden.
