Mushroom Salad

Serves 6


  • 2 cups broccoli flowerettes
  • 3 cups sliced fresh mushrooms
  • 1 cup finely sliced green pepper
  • 3/4 cup chopped spring onions
  • 30g Australina blue vein cheese
  • 3 tablespoons no-oil Italian style dressing

  1. Blanch broccoli and refresh in iced water. Drain well and combine with mushrooms, green pepper and spring onions. Mash blue vein well, add dressing and mix until smooth. Toss dressing through vegetables just before serving.
