Mushroom Cheddar Pie

Serves 4-6


  • 1 sheet frozen shortcrust pastry, thawed
  • 40g Australian butter
  • 500g mushrooms, sliced
  • 1 cup chopped spring onions
  • 200g Australian curd-style cottage cheese
  • 1 1/2 cups grated Australian matured cheddar cheese
  • 1 egg
  • 1 tablespoon lemon juice
  • salt and ground black pepper, to taste

  1. Line a buttered 20cm pie dish with removable base with pastry. Melt butter in a pan and saute mushrooms and spring onion, drain on absorbent paper before spooning into pastry case. Beat the cheeses, egg, lemon juice and seasonings together and pour over filling. Bake at 200C for 10 minutes, reduce to 180C and cook for a further 30 minutes until set and top is brown. Stand for 10 minutes before slicing.
