Muesli Carrot Slice with Lemon Icing

Makes 32


  • 1 1/2 cups wholemeal self raising flour
  • 1 cup toasted muesli
  • 1/2 cup desiccated coconut
  • 2 cups grated carrot
  • 125g Australian unsalted butter, melted
  • 1 cup raw sugar
  • 1 egg, lightly beaten
  • 1 cup icing sugar
  • 20g Australian unsalted butter, extra, melted
  • 2 tablespoons lemon juice

  1. Combine flour, muesli, coconut and carrot. Blend melted butter, sugar and egg and stir into dry ingredients. Spoon into a buttered and lined 20cm slab tin. Bake at 180C for 45 minutes. Allow to cool. For the lemon icing, sift icing sugar and blend in extra melted butter and lemon juice. Spread slice with lemon icing and cut into 32 squares.
