Mozzarella Stacks

Serves 4


  • 3 eggs
  • 1 cup self raising flour, sifted
  • 2 teaspoons brown sugar
  • 2 tablespoons Australian butter, melted
  • 1/2-3/4 cup Australian buttermilk
  • 60g butter, extra
  • 4 slices ham, grilled
  • 125g Australian mozzarella cheese sliced
  • 1 quantity Tomato Toppa (see below)
  • Tomato Toppa -
  • 60g Australian butter
  • 1 large onion, chopped
  • 1 clove garlic, crushed
  • 3 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried basil leaves
  • 1 teaspoon lemon juice
  • salt and black pepper to taste

  1. Beat eggs for 2 minutes until light and fluffy. Add dry ingredients and beat until smooth. Fold in melted butter and sufficient buttermilk to make a batter of pouring consistency. Melt a little extra butter in a frying pan and pour in approx. 1/4 cup batter and make a pancake 10cm in diameter. When bubbles appear, turn and brown the second side. Remove and keep warm. Repeat this process to make eight pancakes. Spread 4 pancakes with extra butter and then top with a second pancake. Place a slice of ham onto each stack and cover with cheese. Grill for 2-3 minutes until the cheese melts. Serve with tomato toppa poured over the top as a terrific breakfast, brunch or light meal.
  2. Tomato Toppa - Melt butter in a saucepan and fry onion and garlic for 4- 5 minutes until transparent. Add remaining ingredients and simmer for 5 minutes.
