Mozzarella Beef and Pasta Bake

Serves 4


  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 500g lean beef mince
  • 1 x 700ml jar Italian tomato cooking sauce
  • salt and freshly ground black pepper, to taste
  • 1 tablespoon finely shredded fresh basil or parsley
  • 500g penne or spiral pasta
  • 2 cups grated Australian mozzarella cheese
  • crisp green salad, for serving

  1. 1. Heat oil in large saucepan and cook onion and garlic until soft. Add mince to pan and stir constantly over high heat until well browned. Add tomato cooking sauce and season to taste. Bring to the boil, reduce heat and simmer uncovered for 15-30 minutes, until slightly thickened. Stir in basil.
  2. 2. Cook pasta in a large saucepan of boiling water until just tender and drain. Mix bolognese sauce into pasta. Spoon half the pasta into a buttered 2 litre capacity baking dish and top with 1 cup mozzarella. Layer remaining pasta and mozzarella on top. Bake at 180°C for 15 minutes or until cheese is golden brown. Serve with a crisp green salad.
