Mozzarella and Asparagus Chicken

Serves 4


  • 20g Australian butter
  • 4 chicken fillets, skin removed
  • 1/2 cup white wine
  • 4 slices smoked ham
  • 1 x 340g can asparagus
  • 4 slices Australian mozzarella cheese
  • 1 x 440g can peeled tomatoes, drained and chopped
  • 2 tablespoons tomato paste

  1. 1. Melt butter in a frypan and brown fillets in 2 batches, until golden brown. Add wine, cover and allow to simmer for 10 minutes. Remove chicken, wrap in ham, top with asparagus and slice of mozzarella cheese.
  2. 2. Place on an oven tray and set aside. Add tomatoes and tomato paste to the wine and simmer covered for 10 minutes. Prior to serving, bake chicken at 200°C for 15 minutes, until cheese has melted and serve with cooked wine and tomato sauce.
