Mocha Tortoni

Serves 4-6


  • 1 cup Australian evaporated milk, chilled
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla essence
  • 2 egg whites
  • 1/2 cup caster sugar
  • 125g dark chocolate, chopped, melted
  • 1 tablespoon instant coffee powder
  • 1/2 cup toasted shredded coconut
  • 1/2 cup chopped walnuts
  • 1/4 cup glace cherries, halved

  1. Freeze evaporated milk in an ice cream tray until ice crystals form about 1cm around the edges then beat until stiff. Fold in lemon juice and vanilla and beat for 1-2 minutes. Beat egg whites until stiff, gradually add sugar to form a meringue. Combine melted chocolate and coffee and fold in meringue. Allow to cool slightly. Fold in meringue, milk mixture, coconut, walnuts and cherries. Spoon into ice cream trays and freeze.
