Mocha Mousse

Serves 4

Ingredients

  • 2 x 375ml cans Australian reduced fat evaporated milk
  • 2 tablespoons cocoa powder, sifted
  • 2 teaspoons instant coffee powder
  • 1/4 cup caster sugar
  • 1 1/2 tablespoons gelatine
  • 1/4 cup boiling water
  • Australian cream, for serving
  • mixed berries, for serving

Method

  1. 1. Combine milk, cocoa, coffee and caster sugar in a saucepan and whisk over heat until just below boiling point.
  2. 2. Combine gelatine and boiling water in a bowl and stir until dissolved. Fold gelatine through mixture and spoon into 4 serving dishes. Refrigerate until set.  Serve with cream and berries.
