Minted Pineapple Ice

Ingredients

  • 1 x 440g can unsweetened pineapple pieces
  • 1/2 cup Australian skim milk powder
  • 1 teaspoon caster sugar
  • 2 teaspoons chopped fresh mint

Method

  1. Reserving the juice, press pineapple into a sieve to remove any liquid. Refrigerate juice until cold and then add milk powder and sugar. Beat until soft peaks form. Freeze until ice crystals form a 5mm edge around the rim of the container. Beat until double in volume. Chop pineapple pieces, then gently fold through with mint. Freeze until firm.
