Minted Cucumber Chiller

Ingredients

  • 1 cup peeled, seeded and diced cucumber
  • 1/4 cup water
  • 1 tablespoon mint
  • 1/2 cup Australian low fat natural yogurt
  • 1/4 cup Australian skim milk

Method

  1. Simmer cucumber in water until slightly softened. Puree and complete as for microwave. Makes approximately 1 1/2 cups.

Tips / Handy Hints

Combine cucumber and water in a bowl. Cook on medium-high 8 minutes until slightly softened. Add mint and puree. Freeze until slightly icy. Add yogurt and skim milk and blend in a food processor until well combined. Serve immediately.
