Mini Muffins and Honey Cheese Frosting

Ingredients

  • 1 cup All Bran cereal
  • 3/4 cup Australian Milk
  • 25g Australian Butter
  • 1 cup self-raising wholemeal flour
  • 1/4 cup sugar
  • 1/2 teaspoon mixed spice
  • 2 eggs, lightly beaten
  • 1 pear, grated
  • HONEY CHEESE FROSTING
  • 125g Australian Spreadable Cream Cheese
  • 1 tablespoon honey
  • 2 teaspoons grated lemon rind

Method

  1. 1. Combine cereal and milk and stand 10 minutes.
  2. 2. Rub butter into combined flour, sugar and spice.
  3. 3. Add eggs, pear and bran mixture and stir until just combined. Mixture will be slightly lumpy.
  4. 4. Spoon mixture into buttered mini (20ml capacity) muffin tins. Bake at 200°C for 20 minutes or until cooked when tested with a skewer. Cool.
  5. 5. Combine frosting ingredients and spread over cooled muffins. Top with lemon zest if desired.

Tips / Handy Hints

Use frosting to sandwich sweet biscuits for a special treat.
