Mini Macadamia Apple Cakes

Makes 30 - 35 cakes


  • 125g Australian butter
  • 1 cup raw sugar
  • 200g Australian creamed cottage cheese
  • grated rind of 1 lemon
  • 1 tablespoon lemon juice
  • 2 eggs, lightly beaten
  • 2 cups wholemeal self-raising flour
  • 1/2 cup macadamia nuts, chopped
  • 1 cup finely chopped dried apple pieces

  1. 1. Cream butter and sugar together until softened. Beat in cottage cheese, lemon rind and lemon juice.
  2. 2. Gradually add the eggs, beating well between each addition. Gently fold in flour, macadamia nuts and dried apple. Spoon tablespoons of mixture into buttered patty pans and bake at 180°C for 25-30 minutes or until cooked and golden.
