Mini Lunchbox Pies

Serves 24


  • 80g Australian butter
  • 1 1/2 cups wholemeal plain flour
  • 1/4 cup water
  • 5g Australian butter
  • 125g shredded cabbage
  • 1 cup grated carrot
  • 1/2 teaspoon dried oregano leaves
  • ground black pepper, to taste
  • 2 eggs, lightly beaten
  • 1 cup grated Australian matured cheddar cheese
  • 200g Australian curd-style cottage cheese

  1. For the pastry, rub the butter into the flour until the mixture resembles fine breadcrumbs. Gradually stir in water to form a smooth dough. Knead lightly on a floured board, roll out to very thin. Using a 7cm round cutter cut 24 circles. Place into buttered shallow patty pans. For the filling, melt the butter in a saucepan and cook cabbage, carrots and seasonings until cabbage is tender. Allow to cool. Gradually beat in eggs and cheeses. Add approximately a tablespoon of filling to pastry and bake at 200°C for 10-15 minutes. Serve warm or cold
