Mini Edam Quiches

Makes 24


  • 4 sheets frozen puff pastry, thawed
  • 125g Australian edam cheese, grated
  • 125g ham, finely diced
  • 2 tablespoons Australian thickened cream
  • 1 tablespoon seeded mustard
  • 1 egg, lightly beaten
  • 1 tablespoon chopped fresh parsley

  1. Cut pastry into circles and press into 2 x 12 muffin trays. Combine remaining ingredients and spoon into cases. Bake at 200C for 20 minutes until puffed and brown. Serve hot or cold.
