Mini Cheeseburgers

This recipe was written for school canteens, but is suitable for home use. These mini cheeseburgers are packed with hidden vegies making them great for kids!

INGREDIENTS

  • 6 slices wholemeal bread
  • ¾ cup milk
  • 750g lean beef mince
  • 1 tablespoon Dijon mustard
  • 1 tablespoon tomato sauce
  • 1 cup grated vegetable e.g. carrot, zucchini
  • 10 (210g) Swiss-style or reduced fat cheddar cheese slices
  • 10 x 9 cm round dinner rolls, for serving
  • sliced tomato, for serving
  • shredded lettuce, for serving
  • tomato sauce, extra, for serving

METHOD

  1. Break bread into small pieces and soak in milk for 10-15 minutes.
  2. Using hands with clean gloves on, combine bread mixture, meat, mustard, tomato sauce and vegetables. Divide mixture into 10 and shape to form a patty.
  3. Place patties on a baking paper lined tray and bake at 200°C oven for 15 -20 minutes or until cooked and brown. Top each burger with a slice of cheese and return to oven or pie warmer for 2-3 minutes to melt the cheese.
  4. Lift each burger onto a split roll, topped with tomato, lettuce and a little sauce. Serve immediately.

HANDY TIPS

Add beetroot, cooked onion, relish or pineapple slices to these simple burgers for something different. Swiss-style cheese is naturally lower in fat than regular cheddar cheese and adds extra flavour to these burgers. Mince meat should always be used on the day it is purchased, so cook burger mixture on the day it is made.
