Mini Aussie Dairy Pie

Ingredients

  • 2 medium brown onions, thinly sliced
  • 20g butter
  • 1 tablespoon brown sugar
  • 2 teaspoons picked thyme leaves
  • 2 sheets frozen shortcrust pastry
  • 80g Australian goat?s cheese
  • 50g Australian fetta
  • 1 whole egg
  • 50ml Australian cream
  • Salt and pepper to taste
  • 1/2 a sheet bought puff pastry

Method

  1. 1. Melt butter in a medium saucepan, add onions and cook until soft. Add brown sugar and thyme. Cook until onions begin to break down and caramelize, (15-20 minutes). Remove from heat and reserve.
  2. 2. Pre-heat oven to 180 C. Lightly spray a 24 hole mini muffin tray with cooking oil. Using a pastry cutter, or a small glass egg cup as a guide. Cut circles to fit and line the base of the muffin tray.
  3. 3. Combine goat’s cheese, fetta, egg and cream in a small bowl. Whisk to combine. Season lightly. Transfer mixture to a small jug. Spoon 1 teaspoon of the caramelized onion into each of the pie bases. Fill with cheese mixture.
  4. 4. Cut 6-7 mm strips off the puff pastry, top the mini pies with crossing strips of the pastry. Bake in pre-heated oven until top is golden and puffed. Centre should be set. Check with skewer. Transfer to a cocktail platter or tray. Serve.
