Michael Klims Gourmet Mushroom and Parmesan Pizza

Makes 1


  • 1 cup self raising flour
  • 2/3 cup natural yogurt
  • 2 tablespoons tomato paste
  • 1/3 cup grated mozzarella cheese
  • 1 cup mixed gourmet mushrooms, sliced if large
  • 1 tablespoon raisins or muscatels
  • shaved parmesan cheese, to serve
  • truffle oil, to drizzle (optional)

  1. 1. Sift flour into a bowl, make a well in the centre and stir in yogurt until mixture forms a soft dough. Turn onto a lightly floured surface and knead until smooth. Roll pizza dough out to a 28cm circle.
  2. 2. Spread tomato paste over pizza base. Top with mozzarella cheese, mushrooms and raisins. Bake at 200⁰C for 15-20 minutes or until golden brown.
  3. 3. Serve sprinked with with shaved parmesan and drizzled with truffle oil.

Tips / Handy Hints

We used a combination of Swiss Brown, Oyster and Enoki Mushrooms. Truffle oil is available in select delicatessens and provides a rich mushroom flavour to this pizza, it can be omitted if preferred.
