Mediterranean Steamed Fish

Ingredients

  • 2 trevally or blue eye fillets
  • 1 tomato, sliced
  • 1/2 teaspoon dried oregano
  • 1/2 onion, chopped
  • 1/4 cup black olives
  • 2 tablespoons dry white wine
  • 100g Australian feta cheese, crumbled

Method

  1. Place each fish fillet on a large piece of foil, top each with remaining ingredients and wrap up to form a pastie shaped parcel. Place in a baking dish and cook for 15-20 minutes at 200C or until fish is cooked. Serve parcel on serving plates.
  2. NOTE: Use frozen chopped onion to save on fine chopping.

Tips / Handy Hints

Prepare fish as above in baking paper and place in a microwave-safe dish. Cook on High for 4 1/2 minutes. Allow to stand for 5 minutes before placing parcels onto serving plates.
