Mediterranean Spinach Fish Parcels

Serves 4


  • 4 white fish fillets (eg. trevally, rockling or blue eye)
  • 80g washed spinach leaves
  • 2 tomatoes, sliced
  • 1/2 tablespoon dried oregano
  • 2 spring onions, chopped
  • 100g black olives
  • 1/3 cup dry white wine
  • 250g Australian Feta Cheese, crumbled

  1. 1.  Place each fish fillet on a large piece of foil or baking paper and top with remaining ingredients in listed order. Wrap up to form pastie shaped parcels.
  2. 2.  Place in a baking dish and cook for 20-25 minutes at 200°C or until fish is cooked.  Serve with a green salad.

Tips / Handy Hints

Substitute chicken for fish if preferred and cook for 30-35 minutes. Use frozen spinach, thawed and well drained instead of fresh spinach if unavailable or fresh basil leaves.
