Mariners Curry

Serves 4

Ingredients

  • 3 tablespoons Thai green curry powder
  • 3 cups water
  • 2 carrots, thinly sliced
  • 2 stalks celery, thinly sliced
  • 1/4 cup cornflour
  • 1/4 cup Australian skim milk powder
  • 500g firm white fish fillets
  • 125g button mushrooms, sliced
  • 6 spring onions, chopped
  • 1/2 cup Australian natural yogurt

Method

  1. In a dry saucepan cook curry powder, stirring over a low heat for 2- 3 minutes. Add 1 cup water, carrots and celery, cover and simmer for 15 minutes. Blend cornflour, milk powder and remaining water together and add to saucepan, stir constantly until sauce thickens and comes to the boil. Add fish, mushrooms and spring onions. Cook for 10 minutes. Serve with rice and yogurt.
