Maple Pecan Butter

Makes 1/2 cup


  • 125g Australian butter, well softened
  • 1 tablespoon maple syrup
  • 2 tablespoons finely chopped toasted pecan nuts

  1. 1. Stir butter and remaining ingredients together until well combined.
  2. 2. Serve spread thickly over fresh or toasted hot cross buns.
  3. This butter is great served over crumpets or waffles with stewed apples.

  6. Orange, Lemon and Lime Butter
  7. Substitute the maple syrup for 1 tablespoon icing sugar and replace the pecans with 1/2 teaspoon of finely grated rind of an orange, lemon and lime and 1/2 teaspoon lime juice.
  8. Tip: Use this butter with crepes, pancakes or over grilled peaches.
  9. Rum and Raisin Butter
  10. Substitute the maple syrup and pecans for 2 teaspoons icing sugar and 2 tablespoons chopped raisins soaked in 1 tablespoon of rum until plump.
  11. Tip: A great way to use leftover rum and raisin butter is to melt in a pan and saute halved bananas until golden. Serve with a generous scoop of vanilla ice cream.

Tips / Handy Hints

All butters will keep for 1 week, covered in the refrigerator.
