Mango Carpaccio with Vanilla Ice Cream and Caramelised Macadamia Nuts

Serves 4


  • 50g macadamia nuts, toasted and roughly chopped
  • 1/2 cup caster sugar
  • 1/4 cup water
  • 2 mangoes, peeled and thinly sliced
  • 4 scoops good-quality Australian vanilla ice cream

  1. 1. Arrange macadamia nuts on a foil or baking paper lined baking tray. Combine sugar and water in a saucepan over medium heat and stir, without boiling, until the sugar has dissolved. Bring to boil and boil rapidly without stirring until the syrup turns golden brown. Pour over macadamia nuts and allow to set. Roughly crush when hard.
  2. 2. Arrange mango slices on a serving plate and place a scoop of the vanilla ice cream in the centre of the plate. Scatter with caramelised macadamia nuts. Serve immediately.
