Mango and Orange Bircher Muesli

Don't be put off by the long list of ingredients as bircher muesli will keep for several days in the fridge so consider making a double batch!

INGREDIENTS

  • 2 cups rolled oats
  • 1/4 cup roasted macadamia nuts, chopped
  • 1/4 cup roasted hazelnuts, chopped
  • 1/4 cup shredded coconut
  • 2 tablespoons pepitas
  • 2 tablespoons sunflower seeds
  • 2 tablespoons chia or linseed
  • 1/2 cup chopped dried apricots
  • 1/4 cup dried sour cherries or cranberries
  • 1 green apple, grated
  • 1/2 teaspoon finely grated orange rind
  • 1 cup freshly squeezed orange juice
  • 1 cup water
  • 500g mango flavoured yoghurt
  • fresh seasonal fruit, for serving
  • extra mango yoghurt, for serving

METHOD

  1. Combine oats, nuts, coconut, seeds, dried fruit, apple, orange rind, juice, water and yoghurt in a large container and refrigerate overnight.
  2. To serve, spoon the muesli into bowls and top with extra yoghurt and fruit.

HANDY TIPS

You can use any yoghurt for this bircher muesli, either flavoured or natural.
