Mango and Orange Bircher Muesli

Ingredients

  • 2 cups rolled oats
  • 1/4 cup roasted macadamia nuts, chopped
  • 1/4 cup roasted hazelnuts, chopped
  • 1/4 cup shredded coconut
  • 2 tablespoons pepitas
  • 2 tablespoons sunflower seeds
  • 2 tablespoons chia or linseed
  • 1/2 cup chopped dried apricots
  • 1/4 cup dried sour cherries or cranberries
  • 1 green apple, grated
  • 1/2 teaspoon finely grated orange rind
  • 1 cup freshly squeezed orange juice
  • 1 cup water
  • 500g mango flavoured yogurt
  • fresh seasonal fruit, for serving
  • extra mango yogurt, for serving

Method

  1. 1. Combine oats, nuts, coconut, seeds, dried fruit, apple, orange rind, juice, water and yogurt in a large container and refrigerate overnight.
  2. 2. To serve, spoon the muesli into bowls and top with extra yogurt and fruit.

Tips / Handy Hints

Preparation Time: 15 minutes You can use any yogurt for this bircher muesli, either flavoured or natural.
