Malay Coleslaw with Peanut Dressing

Ingredients

  • 1 cup sultanas
  • 1/4 cup fresh orange juice
  • 1 carrot, grated
  • 2 cups finely shredded cabbage
  • 1 cup bean shoots
  • 1 cup celery, cut diagonally
  • PEANUT DRESSING
  • 1/4 cup crunchy peanut butter
  • 1 cup Australian natural yogurt

Method

  1. Soak sultanas in orange juice for at least 1/2 hour. Combine with remaining salad ingredients. Combine the peanut butter with the yogurt until well combined. Pour over salad and toss until well coated.
