Macaroni Cheese with Chicken and Pesto

Serves 6


  • 25g Australian butter
  • 1 onion, chopped
  • 2 tablespoons flour
  • 2 1/2 cups Australian milk, warmed
  • 1/4 cup basil pesto
  • 250g penne pasta, cooked
  • 2 cups chopped BBQ chicken
  • 2 zucchini, sliced, blanched
  • 1 cup grated Australian cheddar cheese
  • salt and freshly ground black pepper, to taste
  • 1/4 cup grated Australian parmesan cheese
  • 1/4 cup fresh white breadcrumbs

  1. 1. Melt butter and cook onion for 3 minutes or until soft. Add flour and cook for a further 2 minutes. Add milk and stir until mixture just boils and thickens. Stir in pesto, cooked pasta, BBQ chicken, zucchini and half the cheddar cheese. Season to taste.
  2. 2. Place in a buttered 2 litre capacity ovenproof dish. Combine remaining cheddar with salt and pepper, parmesan and breadcrumbs and sprinkle over pasta. Bake at 180°C for 15-20 minutes or until top is lightly browned.
