Luscious Lemon Delicious

Serves 6


  • 1/4 cup caster sugar
  • 40g Australian reduced fat dairy blend
  • 2 teaspoons finely grated lemon rind
  • 2 eggs, separated
  • 1/4 cup lemon juice
  • 1 cup Australian reduced fat milk
  • 1/4 cup self-raising flour
  • 250g seasonal fruit
  • 4 small scoops Australian reduced fat frozen yogurt or ice cream

  1. 1. Beat sugar, dairy blend and lemon rind together until light and creamy. Beat in egg yolks and lemon juice, then fold in milk and flour.
  2. 2. Beat egg whites until soft peaks form and fold into lemon mixture (the mixture will be slightly lumpy). Divide mixture between 6 lightly buttered ramekins or teacups. Place ramekins in a deep baking dish and fill dish with enough boiling water to come half way up the sides of the ramekins.
  3. 3. Bake at 180°C for 45 minutes. Serve immediately with seasonal fruit and frozen yogurt.

Tips / Handy Hints

For adults: Try adding some lime and orange rind to create a “Citrus Delicious”. Bake in teacups and serve with mint marinated orange segments.
