Lunchbox Loaf


  • 1/2 cup chopped dried apricots
  • 1/4 cup boiling water
  • 60g Australian butter
  • 1/2 cup brown sugar
  • 200g Australian curd-style cottage cheese
  • 1 egg
  • 2 cups wholemeal self raising flour
  • 1/2 cup Australian milk
  • 1 cup unsalted peanuts

  1. Soak dried apricots in boiling water for 10 minutes or until water has absorbed. Cream butter and sugar together. Beat in cottage cheese and egg. Fold in flour, milk and peanuts. Spoon mixture into a buttered loaf tin and bake at 180°C for 1 hour.
