Low Fat Spiced Bocconcini and Rocket Salad

  • 200g Australian milk cherry bocconcini
  • 4 tablespoons dukkah
  • salad of rocket leaves, thinly sliced red onion and roasted capsicum, for serving
  • 40ml lemon juice
  • 20ml olive oil

  1. 1. Roll bocconcini in dukkah. Add to a salad of rocket, red onion and roasted capsicum strips. Dress with combined lemon juice and extra virgin olive oil.

Note: Dukkah is an Egyptian specialty made of roasted nuts and seeds seasoned with a blend of spices.
