Low Fat Ice Cream

Serves 8, Makes 1 Litre


  • 1 cup Australian skim milk powder
  • 2 tablespoons caster sugar
  • 1 1/4 cups water
  • 1 teaspoon vanilla essence
  • 1 1/2 teaspoons gelatine
  • 2 tablespoons hot water

  1. Dissolve milk powder and sugar in water and vanilla essence. Dissolve gelatine in hot water and stir into milk mixture. Pour into a stainless steel bowl or ice cream trays and freeze until partially set. Beat mixture until smooth, creamy and has doubled in volume. Freeze until firm.
  2. NOTE: Allow the ice cream to sit in the refrigerator for 20 minutes befire scooping.
